Egg and Avocado Snack

Before Evan starts his new job, he has a lot of projects to finish. He’s been waking up at 4:00 a.m. (and sometimes 3 a.m.). Instead of trying to fall back to sleep, I stay up and start my day earlier than usual. Therefore, I’m eating breakfast by 4:00 a.m. and wanting lunch by 9:00 a.m.! So, to hold me over I made this quick snack.

Ingredients:

  • Egg
  • Few slices of avocado
  • Crushed red pepper to taste

Procedure:

  1. Heat a small pan and add some coconut pan spray.
  2. Careful crack the egg (so the yolk doesn’t break) into the pan and allow the bottom of the egg to cook through. Then take it off the heat and cover with a lid.
  3. Once the top of the egg cooks a little bit, I served it with crushed red pepper and the avocado.
  4. Enjoy!

My conclusion:

The avocado is filled with fiber and helped me feel full and satisfied till lunch time. Avocado is a great addition to any snack and is supportive with weight loss.
