A few years ago, I went to lunch at this hole-in-the- wall restaurant. They had this “special” tilapia dish that I ended up trying. Unfortunately, it wasn’t like the description at all. Instead, it was this spicy, cheesy fish over pasta. The dish wasn’t balanced. The cheesy sauce overpowered the tilapia and I was barely able to eat a couple bites. The reason for this is typically fish and cheeses don’t go together. Some exceptions to this rule are certain French cuisine dishes and the classic cream cheese and lox. To make a fresh fish pairing, try to keep it simple with ingredients that will add flavor but not overpower the fish, like this recipe.
- 2 Lbs. Tilapia
- 1 lemon, thinly sliced
- 1 jalapeno, sliced with seeds
- Salt & Pepper to taste
- Pre-heat oven to 375*F. Line a baking pan with foil or parchment paper and spray with oil.
- Season fish with salt and pepper and then line the fish in the pan. Place slices of lemon and jalapeno over the fish, and then sprinkle paprika on top.
- Bake in the oven for 15-20 minutes or until the fish is 145*F.
I served this fish with some baked sweet potatoes and steamed green beans. We sat out on the porch with the sunset before us and enjoyed this delicious meal. I love citrus with fish so lemon, lime, orange, or even grapefruit are great pairings.
