My mom likes to try new items at the grocery store. Some new things taste amazing and others need a little revamp. When I worked as a personal chef I had the food budget to spend hundreds (sometimes thousands) of dollars on the best ingredients. Everything I made was from scratch. I didn’t start to revamp items until my mom would buy pre-made foods. Making items from scratch can be expensive. So, if you are on a budget (or like my mom and just want to try something new) know you can always make it taste delicious. My mom was craving crab dip and at the seafood counter they had a special on this “Cajun crab spread”. It had a good base. In the before photo, you can see that it is not spreadable to put on a cracker. Everything I added to the dip I had on hand which saved me even more money.
- ¼ lb crab spread
- ½ cup light sour cream
- ½ cup milk or broth
- ¼ cup to ½ cup olive oil
- Salt and pepper to taste
Tip – You can use Greek fat yogurt or mayonnaise in place of the sour cream. But start with a ¼ cup and increase from there to get the right creamy consistency.
- In your Vitamix or food blender, put in milk or broth. Add the crab spread and sour cream and pulse for about a minute until the spread starts to come together.
- Slowly add olive oil while blending on low speed. Stop blending and scrape the sides of the blender. The mixture should be light and creamy.
I served this both in a bowl with avocado on the side and inside an avocado. I had regular saltines and habanero crackers. Since I don’t live on the coast and can’t buy fresh crab for a good price, this is an alternative when I’m low on cash. If you can it is always better to make from scratch so you can control the ingredients and amount of salt but, this was still really good.
